Clams in Lemon & Garlic :

Preparation time : 10 minutes with at least 20 minutes soaking time

Cooking time : 15 minutes

Serves : 4

Ingredients :

  • 2¼ pounds clams
  • ½ cup olive oil
  • 4 cloves garlic
  • 1 cup parsley, chopped
  • ¾ cup cilantro, chopped
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Directions :

1-Soak the clams in water for 20 minutes to 2 hours. Rinse well and drain.

2-Heat the oil in a skillet over medium heat and sauté the garlic until slightly browned (about 2 minutes).

3-Add the clams and the rest of the ingredients. Cook until clams are done or until they open (about 10 minutes). Discard any unopened clams.

Stone-Backed Bread ( Bolo do Caco) :

Serves : 5-10

Preparation time : 30 minutes plus 1 hour waiting time

Cooking time : 16 – 20 minutes

Ingredients :

  • 6 teaspoons bakers’ yeast
  • 3¼ cups flour, plus extra for dusting
  • ½ tablespoon salt
  • 2 cups warm water, divided

Directions :

  • Dissolve the yeast in ½ cup of the water. Leave for about 5–10 minutes or until yeast is activated and water turns frothy.
  • In a bowl, sift in the flour and salt.
  • Add a cup of the water-and-yeast mixture.
  • Mix together with your hands. Add the rest of the water gradually to get a sticky dough, sprinkling your hands now and then with flour so it doesn’t stick to your hands.
  • Knead until well blended.
  • Sprinkle the surface of the dough with a little bit of flour and cover the bowl with a towel.
  • Let the dough rise for 1 hour.
  • Gather the dough and place on a floured surface.
  • Divide into pieces about the size of walnuts or, if you want them larger, the size of tennis balls.
  • Roll and flatten to about ½-inch-thick rounds (or 1-inch, if you want bigger buns).
  • Cook on a grill or in a heavy-bottomed skillet over medium low heat (about 8–10 minutes on both sides).
  • Usually served filled with garlic butter and as a side for stews and steak.
